Off the north coast of Sicily lies the small island of Salina where for three generations the Colosi family has passionately produced wines from their 24 acres of vineyard. At Spiritus we always tend to favor indigenous grape varietals and their authentic representation of a region’s local wines. For this white, winemaker Piero Colosi uses equal parts inzolia and catarratto grown on the island’s volcanic soil. Light-gold in color, the medium-bodied wine reveals notes of pineapple and white peach with a zesty finish. Of course this island white marries well with fish and seafood dishes including cioppino, a stew with clams, mussels, shrimp and whatever fish you may have on hand. (Gary)
