Cousino-Macul was established in 1856 and remains the only Chilean winery from the 19th century still
owned by the founding family. The vineyards are located in the agriculturally rich Maipo Valley south
of Santiago, 750 prime acres of fantastic terroir near the Andes mountain chain. Their unoaked
chardonnay is an easy-drinking wine of pale gold color with bright aromas of fresh bartlett pear, apple,
pineapple, and a ginger-laced finish. Seafood ceviche, poached sole with beurre blanc, vegetables tossed
in olive oil and chervil or parsley, plus omelettes and savory mushroom crêpes napped with white sauce
would pair nicely with this aromatic, medium-bodied white. (Jenny)
